It was for one of the women in the office who was leaving.  The cake was nothing too fancy, just a yummy chocolate cake with vanilla buttercream. I added some royal icing flowers to pretty it up a bit and did a reverse shell border around the top of the cake for something a little different.</p>

			<content:encoded><![CDATA[<p>I have been wanting to try out some new techniques so I decided to make another display cake for the Farmer&#8217;s Market. I had always wanted to try doing a fondant overlay so that&#8217;s what I did. I covered around cake dummy in pale pink fondant and let it harden. Then I covered in another layer of chocolate fondant letting the fondant cover the cake base as well to look kind of like a hat. While the chocolate fondant was still soft I used small cutters to cut out the chocolate fondant letting the pink fondant peak through. A laser level came in handy to make sure I made the design straight. I finished it off with a pretty ribbon and bow with a criss-cross design from a textured rolling pin. I topped it off with a patchwork daisy also in the pale pink color.</p>

<p>The cake is covered in marblized blue fondant to look like a clear blue ocean. To get the beautiful swirls I combined light blue, dark blue, and white fondant. I kneeded it just to combine so that the colors were not completely mixed together. The cute sea animals I made using a silicone mold. The floating island is sand colored fondant covered in brown sugar and the palm trees are made of gumpaste dusted with green petal dust and wired together with brown florist tape.</p>

I will be teaching Course 3 in January so I decided to make another display cake to put up in the store. I used a lot of the techniques that are taught in Course 3. The cake is covered in white fondant and the Poinsettia design was done using a technique called brush embroidery. A blue fondant ribbon borders the bottom of the cake and little blue snowflakes were piped on the side. ]]></description>

WMI&#8217;s are cake decorating instructors that have gone through the all three Wilton Courses and are certified by Wilton to teach the Wilton method of cake decorating through. Courses are usually offered through craft stores, adult education programs, or vocational schools. I will be teaching at the Michaels Crafts in North Brunswick, NJ.</p>
<p>My first class will be in October so to help promote it I created a autumn inspired cake to display in the store. I used all of the techniques students will learn in the  first course.</p>

<p>July 5th is my father&#8217;s birthday and my parents often visit me in NJ around that time. It has become almost a tradition that I make him a birthday cake every year. He absolutly loves the Entenmann&#8217;s yellow cake with chocolate fudge frosting, so I wasn&#8217;t surprised when I asked him what flavor he wanted and he told me to make it like the Entenmann&#8217;s cake. I did just that, a yellow cake layered with chocolate ganache and covered in chocolate fondant. I airbrushed a tropical sunset scene on top (since my parents now live in Florida and my father loves it there) with a blue seashell border around the bottom to finish it off.</p>

		<description><![CDATA[I recently made a cake that looked like the Atlantis hotel for a bridal shower on Long Island. The bride and groom, Heather and Rob, are getting married at the Atlantis in the Bahamas and the mother-in-law to be asked me to make a cake that looked just like it including the flying fish fountain which is where the ceremony is going to be. ]]></description>

The bride and groom, Heather and Rob, are getting married at the Atlantis hotel in the Bahamas and the mother-in-law to be asked me to make a cake that was a replica of the hotel.</p>

<p>This was the first time I tried to make a cake that looked like a building and it was a little trickier than I expected. I had to calculate the heights, width, and depth that each cake had to be to keep the towers in proportion to one another. I then had to cut, stack, and carve each cake to be straight and level. </p>

<p>Each tower is made of two tiers of cake. The bottom tier has lolly-pop sticks that act as supports for the top layer.  Each cake is covered in fondant and the windows were airbrushed on using a hand made stencil. The flying fish fountain in front of the hotel was recreated using fondant since that is where the wedding ceremony will be. A few gumpaste palm trees and &#8220;sand&#8221; (brown sugar) finish off the landscape.</p>

I decided to make them a cake for the rehearsal dinner that fit their travel theme.</p>

<p>My friend has an old trunk that once belonged to her grandmother and she used to use it every year when she went to summer camp. I tried to make the cake look like her trunk by covering it in brown fondant and adding black fondant details. I then printed out postcards of all the places they have been or plan on going. The postcards were printed using edible ink on edible icing sheets and attached to the cake.</p>

<p>We threw a bridal shower for one of my best friends this weekend. The theme of the bridal shower was &#8220;Summer Camp&#8221; since the bride and groom met working at a day camp. The bride also used to go to sleep away camp every summer while growing up and one of her favorite camp songs was &#8220;A boy and a girl in a little canoe&#8221;. I decided to use that song as the inspiration for the cake.</p>
<p>I made wood grain fondant by kneading together three difference shades of brown, then used it to mold a canoe.  The boy and girl in the canoe were also hand molded out of fondant. They are wearing jeans and a white collared shirt which was similar to the uniform the bride and groom wore when they worked at the day camp. The background was a sheet of fondant that had been airbrushed to show a mountain lake by moonlight. The flavor of the cake was what I call Peppermint Patty (white peppermint cake with a chocolate swirl). It had chocolate ganache filling and chocolate buttercream frosting that was then covered in blue fondant.</p>

<p>As part of the camp theme we named each table to be a different camp activity such as swimming, music, recreation, and arts &amp; crafts. I made 4 mini cakes to go with the different table themes and made fondant decorations to go with each one.</p>
