Piping is a type of decorating technique
where icing (either buttercream or royal
icing) is applied to a cake, using a pastry
bag, to form a pattern. The type of
piping shown here is called cornelli lace; a
random pattern of continuous curving
lines that do not overlap, creating the
look of lace. There are an endless
number of patterns that can be applied
to cakes using the piping technique.
