As you can probably tell by the name of my website that I love baking cakes, but that isn’t all I love to bake. I like making cookies, brownies, and even pie. I’ve only recently been adventuring into the realm of pie, but I was very excited when my husband bought me Rose Levy Beranbaum’s Rose’s Perfect Pie Plate for Christmas this year.
I also received her new Rose Levy Beranbaum Signature Series 3 piece baking bundle which included Rose’s Magic Dough Pastry Mat, Rose’s Fast Tracks Dough Thickness Rails, and Rose’s Magic Non-Stick Rolling Pin.
I couldn’t wait to take all my new baking gadgets for a test spin and I thought I would write a little review of how it went.
Rose Levy Beranbaum Signature Series – Magic Dough Pastry Mat
I actually broke out the Magic Dough Pastry Mat to make some of my Grandma’s famous Struffoli for the holidays. Struffoli are an Italian sweet made by frying small balls of dough and then soaking them in honey. The dough has always been very sticky so I was interested to see how it did on the non-stick pastry mat. The verdict: very well! I also loved that the mat had a ruler along the bottom which allowed me to cut the dough to a uniform size. This was definitely an improvement over what I would usually do, which was roll the dough right on my counter.
Next up was apple pie. The apple tree in our yard finally gave us a great crop this past summer, so I had canned tons of apple pie filling for the first time. I hadn’t tried it yet, so now with my new fancy pie set in hand, it was time. I decided to use the recipe for pie crust that comes on the mat, and is also included with the pie plate. You can also find the recipe on Rose’s website.
The crust recipe is easy to make and comes together pretty fast in a food processor. It does take some planning ahead though because you have to freeze the butter, and then the dough needs to chill for about an hour before rolling.
Rose Levy Beranbaum Signautre Series – Fast Tracks and Rolling Pin
Once my dough had chilled it was time to roll. That is where the Fast Tracks and Magic Non-Stick Rolling Pin came in. The fast tracks are wonderful. I had something similar to them, but they were plastic, and not labeled. The plastic ended up warping and I never could remember which size was which. These fast tracks are silicone so they are more sanitary, easy to clean, flexible and well labeled. I highly recommend getting a set of these to use for rolling out anything from pie dough, to cookie dough, to fondant.
The rolling pin was also very nice. It is light weight which means it won’t weigh down the dough while you are rolling it creating an uneven thickness. It was also pretty non-stick so I didn’t have to use very much flour on it or the mat.

Last but not least there is the pie plate itself, which I just loved. The design of it is beautiful with the fluted edge, and the pie baked up perfectly. I have never had a pie crust stay so crispy even a few days after baking.
You may notice the crust pulled away from the edges a bit, but that is because I forgot the step of chilling the entire assembled pie before baking (always double check the recipe instructions). Even though that happened, the pie still came out gorgeous thanks to the presentation of the plate itself. I’m also happy to say that my experiment with canning my own Apple Pie filling was a huge success so I will definitely be posting my recipe for that in the future.
All in all I would highly recommend all of the products in Rose Levy Beranbaum Signature Series line. They are a great addition to any baker’s arsenal.
