Piping Scrollwork With a Laser Level

example of piping scrollwork | www.80cakes.com

If you are a cake decorator then you know one of the early skills you need to master is piping scrollwork. Not only do you need to have a steady hand to make the scrollwork smooth, but you also have to apply it to the cake straight and even. A few years ago I decided to start using a laser level to help me when piping scrollwork. Here’s a video of how I use it, along with some Wilton scroll presses, to get a nice evenly piped scroll on my cakes.

It works great for other things too. I think the first cake I used a laser level on was this Luis Vuitton purse cake. It really helped me keep the LV pattern straight.

After graduating from college in 2003 I went to work as a Chemical Engineer. My new job gave me the chance to travel the world and experience many foods and cultures I had never known before. I soon rediscovered my passion for baking and cake decorating. I would always bring back new ingredients and ideas from the places I visited and incorporate them into my cake recipes. Read More…
